Oven Fried Pork Chops

I love pork chops. Usually they are a decent price and cook pretty fast. I have always cooked my pork chops the same way, in a pan on the stove with salt and pepper. So I ventured out to find a new way to cook them and came across this beauty of a recipe. This is great. The spice flavors are fantastic and I love the crunch the breading gives them. This will definitely be in the rotation of recipes for me.

Kung Pao Spaghetti

Wow. I've had this recipe pinned for quite a while and I've looked at it several times thinking I bet this dish is awesome. In the original posters blog post she mentioned that it was to mimic a dish found at California Pizza Kitchen. Well I had never been there when i first came across this recioe but a couple of months ago I decided to go with some girlfriends and my goal was to get this dish to decide whether I should make it at home. Super long and ridiculous story cut short, the dish I got at CPK  was way to spicy so I sent it back and opted to not try this recipe. Well finally last week I looked at it again because I knew I had all the ingredients on hand and I needed something to throw together. Wow. I'm really kicking myself for waiting so long to try this one out. It's so incredibly simple and full of amazing flavor. My husband asked that we keep this as one of our go  to dishes so that's saying a lot in our household.

Sausage Gravy over Biscuits

Okay I apologize for it being so long since I have posted anything. I got in a major recipe slump and started just fixing all of my recipes from on here and had no ambition to try something new. Man I don't know how food bloggers create and have new recipes every day for years and years. It's simply amazing and mind blowing that they have the brain power to do that much. I don't even have that much brain power and I just find recipes lol.
Anyway, to the recipe. Anybody who knows me knows that I love biscuits and gravy. I can be at the yuckiest motel breakfast buffet and still pour me a gloopy  glob onto a hard biscuit if it's available. I don't know why. So finally a couple of months ago I decided I should try to make my own. And boy am I glad I did. I love this recipe. I made this recipe every week for a month till I burned myself out for a bit (and gained a food 5 pounds lol). Now that I'm getting around to typing this up I'm starting to crave it again. I hope you enjoy this recipe as much as I did.

Pan Fried Italian Thighs

Oh baby! This recipe is a keeper. I don't think my husband has ever given so much praise in his life over a meal, let alone chicken thighs. He gobbled these babies down so fast and he even ate the skin which he never does! I have to agree with him, these chicken thighs are simply AMAZING!
The ingredients are super simple and ones that most people have in their pantry already. The thighs come out super crunchy on the outside but super juicy on the inside. You will not be disappointed with this recipe. AND you can totally switch up the seasonings on the outside to suit whatever your taste buds are in the mood for that day! Enjoy!

One Pot Pasta

I know its been a while since I have posted anything. I've been in a bit of a cooking rut and just been making the same old meals instead of trying a few new ones every week. Well last night I tried one of the One Pot Pasta recipes that I found and it was great. I have tried a couple of them now and the first one I thought was nasty (it reminded me way to much of a tuna noodle casserole that I ate as a child) but this one had great flavors.
The thing I have decided that I really like about this other then the good flavor is that it is incredibly simple and doesn't dirty hardly any dishes. You literally throw everything in the pot and let it cook together and bam its all done.

Turkey Burger Brushetta

Okay I have been on a SkinnyTaste overload lately and I can't stop. This ladies blog is simply amazing and I can't wait to buy her cookbook!
This recipe I have been eyeing for quite a while but wasn't sure how the hubs would like it.
Well needless to say he said it was blog worthy so this is great one. And no bun, so it helps keep the carbs down!
I love fresh tomatoes with ground meat. They just go so well together. I like how it has the bruschetta topping. I LOVED the basil and balsamic combination with the meat. They complimented each other very well. Not to mention the huge chunks of cheese.

Asian Turkey Meatballs

Okay when I think of meatballs I usually don't think of them as having an Asian twist. Well I guess I have had like a sweet and sour meatball before BUT nothing like these. This recipe was so light and refreshing AND incredibly easy to make! Summer foods to me are all about keeping it simple and light since its so stinking hot outside.
These make a great dinner or you could totally use them as an appetizer.
The lady who came up with the recipe served hers over a bed of spiraled zucchini, which looked awesome. I however don't have a spiraler so I just had mine plain with the dipping sauce with a side of zucchini and quinoa.

Chicken and Asparagus Stir Fry

Something I love about summer is that keeping meals light and simple. This recipe is so refreshing to me. It has classic Asian ingredients that just seem to pop with freshness.
I also like cutting everything into smaller pieces because that allows the cook time to be way less, which means that my kitchen doesn't have to be super hot for a long time. Now right now asparagus in most places is not at its cheapest, usually it is best in the spring, I when I made this recipes I actually used green beans which were a great substitute.

Salmon with Nectarine Salsa

I had to get this recipe on here asap! This recipe is fantastic! Technically this is two recipes but I am going to just keep them as one because they go so well together!
I'm always a little hesitant when it comes to "fruit salsas", because for some reason in my head I think eww fruit and spice equals no. BUT this salsa is absolutely fantastic!
The salmon recipe alone is great, but, adding the salsa on top of it takes it to a whole other level of amazingness! This will be one recipe we will be having over and over this summer. It's so light and refreshing.

Chicken Thighs with Mushrooms

Sometimes the easiest of meals are ones you never really think about. I had never thought about posting a recipe for chicken with mushrooms but you never know, some people may have never thought to pair chicken and mushrooms together :)

Lentil Curry Soup

Hey all. I made this recipe last night for dinner and holy moly! This stuff is great. I love a good lentil soup and this is definitely a good one. This recipe came together pretty fast as well which makes it great for a weeknight meal. This is also a great recipe if your trying to cut out some meat. We like to try to have a meatless meal once a week so having a nice soup like this that is jam packed with lentils makes it so you don't even miss the meat because they have so much protein in them.

Garlic and Mushroom Quinoa

Wow! I apologize that it has been so long since I have posted any recipes. I got into a recipe slump and just kept making the same old things every week. This week I decided to break out some new recipes. I wanted to try out some new recipes that could be part of the Anti-Inflammatory Diet.
I seem to always have the same side dishes when I do cook those foods so I wanted to branch out a tiny bit. This time instead of making my normal plain old Basic Quinoa (which is great) I decided to throw in a couple other ingredients to jazz it up. It turned it great, and so versatile.
Enjoy!

Ham and Potato Soup

Do you have a bunch of ham left over from your Easter festivities?! I did! I had like 10 pounds of it still! So I went on the search of some new recipes to try. I originally wanted to make a split pea and ham soup or a ham and bean soup because that's what I always remember my mom making when growing up.
I usually like to go on the search through Pinterest and just find the prettiest looking picture of what I want and make it, but this time I decided I wanted to just find a good recipe fast without having to hope it will taste good. All Recipes is always my go to for that because you can see the ratings of the recipes and how many people have rated them. When I saw that this recipe had almost 8,000 reviews and was a full 5 star I decided this would be the recipe to try!
WOW! Its so basic, and so simple, and SOOOOO good! I like basic recipes because once you know you like it, you can add whatever you like to it to jazz it up! This recipe will be a keeper that's for sure!

Homemade Chicken Broth

Oh chicken broth. We love this stuff so much at my house. Whenever I get a rotisserie chicken from Costco or have leftover bones from any kind of chicken (or turkey) I make broth out of it and store it in the freezer for a rainy day.
When one of us is sick at our house we heat up some of this yummy deliciousness and it makes us feel so much better! Its a great way to get a lot of nutrients into your body.
I use this for all sorts of recipes. I especially love it in my Homemade Chicken and Quinoa Soup! It is a great start to any soup to be honest :)
You will not be sorry you tried making your own homemade broth, and may not even go back to buying that store bought kind because this stuff has so much more flavor!

By the way, I just want to give a big shout out to my wonderful followers.  Man, I really do appreciate all of you who follow my blog and enjoy these recipes. It really makes me happy to know that sharing great recipes can really help people enjoy being in the kitchen. I appreciate all of your comments as well! When I see that I have new comments it seriously makes my day a billion times better! SO THANK YOU!

Honey Mustard Pretzel Chicken

What a delicious recipe. I have seen this recipe go around Pinterest now for quite a few months and have pinned it quite a few times but just hadn't gotten around to testing it yet. Well I'm sure glad that I did because it was a big hit at our house. Lately it seems that my little 2 year old doesn't like anything so when she gobbled this stuff down I knew it was a keeper!
I love that you put the chicken in the sauce to hold the coating on rather then an egg mixture. I think it really helps add some flavor to it while keeping it nice and moist!

Strawberry Pie Filling

Alright. As promised. Here is a fantastic Fresh Strawberry Pie Filling recipe. Since strawberries have been on sale all over the place I couldn't resist making a pie. It was seriously one of the best strawberry pie recipes I had ever had. This one is definitely a keeper!

Pie Crust

So a couple of days ago was "PIE DAY" (3.14) so while we were at the store and saw some beautiful strawberries I told my hubs that I would make us a fresh strawberry pie.
Anybody who knows me knows that I do NOT make pie. I have always been under the impression that it is super hard and time consuming and blah blah but then every time I make a pie I say to myself "self: why do you think this is hard? THIS IS EASY!"
Today I will share with you a recipe for a fantastic pie crust that I got from my mother in law. She makes the best pies I have ever eaten in my whole life and a lot has to do with this fantastic crust recipe. It is so flaky and perfect. Tomorrow I will share the recipe for the fantastic fresh strawberry filling to go inside!
ENJOY!

Chicken and Pepper Pasta

Good morning beautiful people. It has been a while since I have posted anything new on here. I have had a few recipes that I have wanted to share but busy life has gotten in the way the past couple of weeks with church callings and with being sick. Anywho, enough about me, lets get to the recipe. This recipe came right off one of pasta boxes from the store and usually I don't like to try that kind of stuff because they use lots of processed foods but this one actually sounded really good to me at the time.
This was incredibly fast to put together and tasted great. I liked that the "sauce" was not some thick alfredo sauce, its just a light chicken stock. I found this dish very refreshing. This dish was also on my table from start to finish in less then 20 minutes so you can definitely have this on a weeknight even if you are busy!

Chicken & Broccoli Pasta

If your in need of a quick, healthy, and delicious dinner then this is calling your name. I have a recipe that is similar to this one already on my blog that is made with beef and zucchini. So if your looking for something else to use your leftover Italian dressing on after you make this recipe try out the Italian Beef Stir Fry as well.
This recipe can be on your table in 30 minutes or less and its a one dish meal. It has your veg, your protein, and your grains...what more could you need?! You could do this with so many different combinations of meats and veggies.

Coffee Cake

Oh coffee cake. I know that when you think coffee cake most people think of the spice cake that has the brown sugar topping on it. In my household that is known as "Cowboy Coffee Cake". So when I hear coffee cake this is what I think of. Every Christmas, Easter, General Conference, etc. my mom would make this for us and it was always my favorite.
I haven't had this in such a long time because my husband is not a fan of cooked fruit so using jam in anything is out of the question. But I have been craving some of this yummy deliciousness lately so it might just have to happen anyway!

Creamy Italian Chicken and Rice

I love this stuff. In our family this is known as "Marty's Yummy Chicken and Rice". My sister was the one in our family to discover this amazing recipe many years ago and has long since been passed around and is a favorite in most homes.
This recipe is so simple and has great flavor. You just throw everything in the crock pot and let it do its magic. I like to serve mine up on top of some nice rice but I know some people serve it up over noodles instead. Either way is great.

Sweet N Salty Coconut Chips

OH MY! If you are looking for a healthy sweet and salty snack oh man...these babies are it. One of Sam's patients brought some into them the other day and he brought some home for me to try and they were out of this world! I went right out and bought some coconut flakes and made them the next day!

Autumn Salad Anti-Inflammatory

If your in need of something light and fabulous tasting then this recipe is one that you have to try. It uses a lot of ingredients that a lot of people have on hand and is full of flavor. Leave off the chicken for a nice side salad or throw it on and make it a nice light meal. I love how there is so much crunch and flavor in this salad. I will definitely be having one of these for lunch again today!
*Note this picture of this recipe uses dried cranberries instead of the strawberries. When you can have cranberries totally add them back in!*

Mashed Cauliflower

I have seen mashed cauliflower pop up all over pinterest lately and have been putting it off to try because it sounded a little bit to weird to me. How can cauliflower taste like a mashed potato....yep that is the question ladies and gents but I will tell you what...for some strange reason it really does taste extremely close! I was shocked at how much it really did taste like a heap of mashed potatoes. Mashing cauliflower is lower in carbs and makes for a great alternative if you struggle with potatoes. In fact I know some people will even mix half and half (potatoes and cauliflower) and then you really can't tell a difference at all!

Mexican Chicken Tacos

OH MY GOODNESS! I don't know why I don't make these more often! Not only are these ridiculously easy but they are RIDICULOUSLY GOOD!
This is a recipe that my mom had started making during my teenage years and I fell in love with them. These flavors in the cooking liquid is amazing that you don't even need to top your tacos with anything, unless of course you want to. The flavors remind me of a classic Mexican taco wagon. You know the ones I am talking about!
Cooking the meat in the crockpot allows the flavors to really develop in the meat while making the meat nice and tender, also making it easy to shred.
One thing I love about shredding meat is that it makes it go a long way. I did a pretty small roast and we will be eating this for leftovers for at least a few days. This is also a meal that warms up fantastic.
You will not be mad you tried this one out.

Lime, Coconut, Curry Chicken Anti-Inflammatory

Yes. You take the Lime and the Coconut and stir it all up.  I know you were thinking it, and frankly I was singing it as I typed it.
This is a fantastic marinade for chicken. At first I was a little skeptical because it marinades in coconut milk but I'll tell you what...Its like chicken curry without all the soupy mess! Grill it, fry it, bake it, who cares. Just cook it and get that jazzy bit of song in your belly! I bet you money that while you are zesting your lime and have that can of coconut milk sitting next to it, you will be humming that tune just like me. (Okay I won't actually bet you money because frankly I always lose bets and don't really feel like dishing out a bunch of money to people I don't even know)
Top it off with some fresh squeezed lime juice and cilantro and you've got yourself a tangy delicious bit of chicken!

Chicken and Andouille Sausage

I believe I will be making this in a couple of days for dinner. I have made this a couple of times and it is delish. You can add lots of liquid to your bowl and make it more soupy with the addition of quinoa, or just serve it on a plate with no liquid. I have tried it both ways and personally I preferred it more as a soup. The broth has such a good flavor. This recipe did come from SkinnyTaste, so be sure to check out her page!

Almond Chicken Anti-Inflammatory

I was very surprised at the lack of almond chicken recipes on the internet. I thought this was a popular dish? I found 3 that seemed okay but none of them would work with the anti-inflammatory diet so I had to create my own substitutions to make it work.

Breakfast Quinoa

Now I am the first person to tell you that Quinoa is not one of my most favorite things to eat. After trying out a few different ways of having it for dinner and almost wanting the throw it right back up I decided to give it a chance for breakfast. I came across this recipe from one of my most favorite food sites skinnytaste.com and you know what...its actually good. Coming from me that is a pretty big statement because I can't stand the stuff to be honest. The first time I did this diet and did quinoa for breakfast I did everything I could think of to just choke the stuff down. Needless to say I never really looked forward to waking up and eating because I hated it so much.
BUT NOW...I have found this fantastic recipe that makes it taste a lot like cracked wheat cereal. And of course, is anti-inflammatory diet friendly. Enjoy!

Turkey Stuffed Peppers

I came across this blog called SkinnyTaste.com and it is the most absolutely fantastic food blog I have ever come across. There are a gazillion recipes on there that sound so amazing. This recipe happens to be one of those. Now, the woman who created this recipe made these recipes of hers according the the Weight Watchers Points Program so some of the ingredients you may or may not want to substitute.
These are my absolute favorite stuffed peppers recipe out there. I have made these so many times and never get sick of them. The flavors are absolutely fantastic and to top it off, its super healthy for you.
*Please note. This picture does show cheese and the original recipe does put cheese on top. Once you are allowed cheese, it does make a really great addition.*

Creamy Chive Chicken

Sometimes having just a basic sauce you can pour over your meat takes it from one level to the next. You could serve this up with so many different things. I think some Roasted veggies would be great along with some Quinoa.

Turkey Lettuce Wraps

This would make a great easy lunch to take to work or even a great snack. In need of a quick and easy meal that will satisfy any pallet? This is crunchy, salty, and full of all the flavors of a typical turkey panini BUT this is a version just for you.

Lime & Chili Chicken Anti-Inflammatory

As the weather has started turning colder I have been trying to break out all the grilling recipes I can find so that we can survive the winter without the grill. I came across this recipe on the Betty Crocker website. This was sooooo incredibly easy to make and tasted really good.
This recipe does have a bit of a kick to it, so be warned. If you don't like it quite as spicy then just tone down some of the spices a bit.

Spicy Grilled Chicken

This is a great spicy recipe that is juicy and full of flavor. I love using the grill because its hard to mess meat up. I have used both chicken thighs and chicken breasts for this recipe and I prefer the thighs but the breast works fine. This would be great with some Grilled Zucchini and you could even try grilling up some sweet potatoes with a little olive oil, salt and pepper. (I personally have never tried to grill a sweet potato so I would love to hear how it turns out if you try it!)
(This is the Anti-inflammatory version of this dish)

Chicken in Spicy Garlic Sauce Anti-Inflammatory

This recipe was so simple and it made me bring out my wok which I haven't used in quite some time. Overall, its a nice meal jam packed with vegetables.
The thing I love about making stir-fry is that you can add so so so many different vegetables or meats, throw a little sauce on it and boom...you've got a fabulous dish made with fresh ingredients, all in one dish!
*Please note that the picture is for the original recipe which had shrimp in it. I have corrected the ingredients below to show the anti-inflammatory diet friendly version :) *

Foil Pack Chicken Fajitas Anti-Inflammatory

I like to prepare this dish in the morning or during my breaks, stick them in the fridge, and then when I get home I can just pop it in the oven. This is one of my favorite meals to make. Its easy, fast and has basically everything you need for the whole meal in this cute little packet.
*Note this picture has ingredients that are not in the first three weeks of being on the diet but the recipe below does not have those ingredients listed. This picture was taken of the original non-anti-inflammatory recipe.*

Forgive Me

Hello friends. I just wanted to make you aware that I will be adding some duplicate recipes on here that I have already posted about. I am doing this to help make my site a little more user friendly for patients who are coming here from my husbands work Red River Health and Wellness. I will be taking some of the recipes that I previously had though could be diet approved with modifications and just re-writing them with the modifications already in them so it isn't so confusing for them/you. Please be patient as I go through this process and I will get back to posting not duplicated recipes again shortly :)
Thank you so much for your continued reading and patience!

Chicken and Lentil Soup

Oh SkinnyTase! You've done it again. I just love this ladies website! she has the most amazing recipes that are easy and healthy!
I have really been in the mood to have some lentils lately and of course the only thing that popped into my head was lentil soup. I didn't want to make the same kind I always do so I ventured out to find a new recipe. This recipe is great and easy! Its full of flavor and will fill you right up!

Easy Greek Roasted Chicken

Ok I saw this picture of a recipe on Pinterest and I knew it was something that I must try! Doesn't this picture just scream "I'M DELICIOUS"?! Well it did to me and I am here to tell you that it did not disappoint.
Not only is this chicken FULL of awesome flavor but its ridiculously easy. You just throw everything in the pan and let the oven do all the work.
I did have to make some corrections to the recipe so check out my side notes for those!

Fantastic Waffles

Lately my mornings have been starting off with a waffle. Every morning I ask my little girl what she would like for breakfast and for the past 2 weeks its been waffles.
Usually my husband is in charge of making waffles on Saturday mornings but we went through those ones pretty fast a few weeks ago so when she asked for some on Monday I grabbed my trusty Better Homes and Garden book and made waffles. I don't know if just made them wrong or what but I did not like them anymore. (Even though that is the recipe we have used for years).
So I quickly ran to my trusty pinterest and found this yummy recipe from food.com.
Its great. Probably because its loaded with butter but oh baby its good. The thing I really like about these waffles is that you whip the egg whites and fold them into the batter which makes the waffles so light. You won't regret trying this recipe out! Especially with some good homemade syrup...mmm..yummy yummy! ENJOY!

Balsamic Glazed Steak Rolls

Okay first of all doesn't this picture look absolutely amazing?! That is why I had to try these, because the picture looked so fun and yummy!
These little guys won't disappoint! They taste as good as they look! They do require a little bit of work so this one will need to be saved for a day when you just feel like being in the kitchen for a little while, but they were fun to make.

Loaded Philly Cheesesteak Potatoes

This is such a great recipe. This is the perfect weeknight meal. Its super fast, easy, and pretty healthy for you as well. If you cook your potatoes in the microwave then your meal will seriously be done in less then 20 minutes. That's pretty fantastic if you ask me!
I hadn't been over to my favorite food blog SkinnyTaste in a while and I'm glad that I stopped by because I found this great recipe. If your looking for more healthy recipes like this you should definitely check out that blog. It is simply fantastic!

Turkey Nachos

Need ideas for your left over turkey? Here is a fantastic recipe that I use almost every time we have leftovers!
I got this recipe from my mother in law one Thanksgiving a few years ago.
I think the thing I like the best about this recipe is that you aren't just eating the same old leftovers. The turkey is totally revamped and thrown into a Mexican twist that it helps to break up the heaviness of the holiday food eating.

Alfredo Sauce

Hello Friends! I feel like it has been far to long since I have posted! Now that all the craziness of the holidays are over I feel like I can breath again. I hope that all of you had some amazing holidays and created beautiful memories!
Now, for the recipe. I have had this recipe for a long time, written on a napkin in my recipe box. I have made it many times and can't believe that I haven't posted about it.
I am a lover of everything smothered in alfredo sauce! My husband loves it as well. In fact, every week while I am planning out my menu for the following week I ask him one meal that he would like to have that week and every time it is "oh I don't know, maybe some chicken with some penne and some alfredo sauce?" LOL.
Since I hadn't made it in a while I decided to cook it up for some of my favorite people last night. It turned out great and really the recipe comes together pretty fast.
