Cilantro Lime Cauliflower Rice

You guys!! Cauliflower rice is so stinking easy I may just switch over to this instead of making real rice. This came together so quick and tasted so good. If you are looking for an alternative to rice this is it. It's weird how different you can make cauliflower taste. I have made it mashed before and it seriously tasted just like mashed potatoes. Same goes for this recipe. It tasted just as good to me as real cilantro lime rice. I paired this with some Crockpot Black Beans and Cilantro Lime Chicken.

Cilantro Lime Chicken with Guac

One thing that I have learned while doing the Anti-Inflammatory diet is that chicken becomes your new best friend and your worst enemy.
What's for dinner? Chicken. What did you eat for lunch? Chicken. What are you making for breakfast? Probably chicken.  But I am actually okay with it because chicken is so versatile. My favorite recipes are always going to involve some form of Mexican flare to them. There is just something about adding cilantro and avocado to a recipe that makes my taste buds jump with joy.
This recipe is fantastic. Letting the chicken marinade in all the yummy goodness and topping it with this awesome guacamole really make me happy. I paired mine up with some black beans and cilantro and lime cauliflower rice (recipes to follow).

Sheet Pan Sausage and Veggies

I know it has been ages since I have posted anything, and I also know that I have started pretty much every post this way for the past year or so. I feel like my life has become so busy with me going back to college and having a child in school now that even spending the 5 minutes on here to post a recipe seems to be a feat. BUT I promise that I am going to try harder because I have been working on compiling a nice recipe list for my fellow Anti-Inflammatory Diet friends.
To get personal for a bit, my daughter and I have both been struggling with Rheumatoid Arthritis and it seems like since my daughter started kindergarten she had been having pain every single day. This is so frustrating to me as her parent. I am used to the pain because I have dealt with it my whole life, but to see her suffer breaks my heart. Anyway, about 6 weeks ago we decided it was time to get serious and test out some food allergies and get her food triggers figured out so that we could at least keep her pain to a minimum.
So long story short, I have a bunch of new recipes to post for you guys and I will work hard to get them on here when I have time here and there.
This recipe that I found is not only awesome, but it all cooks in one pan which makes for a less hectic clean up process. We had this recipe on DAY 1 of our journey through the diet. I liked it because it made a massive amount of food and had plenty of leftovers to have for lunches throughout the week.

Ranch Chicken and Veggies

I am all for easy meals. This recipe is beyond yummy and has all your side dishes cooked along with the meat on one pan. You can't get much easier then that. Lately I have been loving the "one pan" and "one pot" meals. Less dishes to wash after, and you get your sides and main dish knocked out at once. With little kids it can be hard to spend 30-60 minutes in the kitchen working on everything so the faster I can get everything done, the happier we all are.

Garlic Baked Salmon

This past year I decided to buy 20 pounds of Alaskan Salmon from Zaycon foods. First off, it's amazing. Second, since I bought so much salmon and wanted to eat it almost every week I have had to find some new ways of cooking it.
This ladies and gents has become my new favorite way to cook it. It's fast, simple, full of flavor, AND there's hardly any cleanup because you cook it in foil.
If any of you know my 5 year old, you know she doesn't eat anything. Like....ANYTHING. But she loves this recipe and always has a large helping of this salmon. I call that a win.

Almond Flour Pancakes

Usually I am a gluten lover. I LOVES ME SOME GLUTEN! But I have been trying to cut back a little bit and try out some different recipes that still taste good. This recipe is great. It is made with almond flour, which I love and is also dairy free, soy free, and grain free. These pancakes have become a staple in my home for breakfast. The flavor is good and the consistency is similar to a whole wheat pancake.

Bahn Mi Rice Bowls

A while back on Netflix they had the Great Food Truck Race so I binge watched it of course and was hungry all the time. One of the food trucks that sparked my interested was a Bahn Mi Sandwich truck. I had no idea what these things were but every time they made them they looked absolutely delish. Well fast forward a couple of months and a restaurant  opened up literally around the corner from my house that was all about the Bahn Mi. I am now officially an addict and wanted to try my hand at them at home.
This version is, obviously, not a sandwich. One thing that makes a good Bahn Mi sandwich is the rolls they use and I was not about to butcher those amazing bits of goodness so when I found a recipe using the same flavors they put inside the sandwich but served over rice I knew this was a version I would feel comfortable making.
One thing I love about this recipe is you have your hot cooked rice and meat served with crunchy fresh pickled vegetables, fresh raw vegetables, and cilantro (which I am obsessed with).
Guys...this stuff is awesome. I have made this recipe multiple times for multiple people who have come to stay at our house and every time I have been asked for the recipe.

Glazed Ham

I probably should have posted this recipe before Easter but for some reason I thought I had posted about it years ago. Hopefully some of you bought hams on clearance and will now be able to use this recipe next time.
I love ham. We have a small family but I still buy a huge ham every Easter season so that I can make all the yummy leftover ham recipes. I usually just buy the spiral cut hams that have that yummy glaze with them, but sometimes I opt to buy the cheaper non spiral cut ones and make my own glaze. THIS ladies and gents is a keeper of a glaze. It's sweet and has the perfect flavors that pair nicely with the ham.
