Homemade Pita Bread

Not gonna lie. This recipe really intimidated me. Well not the recipe but more the concept of making pita bread and not just buying it from the store.
Lately I have been craving Greek food so this week's meals consisted of lots of Greek flavorings. Those recipes will come.
Originally, honestly speaking, I went to the store to find some pita bread and they didn't have any. I was so disappointed even though I knew that the store bought kind wouldn't even be good. So I broke out of my comfort zone and attempted this recipe. I don't know why I am always so intimidated by bread making but everybody has a weakness and bread making is mine.
This recipe was actually really easy to make and the bread came out so thick and soft. This recipe is for a traditional pita bread which does not have a pocket in it.
Tomorrow I will post the reason for needing a pita bread recipe, which is Chicken Gyros and Tzatziki Sauce.

Grilled Steak with Garlic butter



For valentine's day this year we decided to stick to kind of the traditional steak and shrimp meal. We usually opt to stay at home and cook together rather then going out and waiting forever for a table in a crowded restaurant.
Anyway, instead of having just a plain steak this year we decided to jazz it up with some garlic butter. This recipe was so incredibly easy and very delicious. It took a plain old, still good, steak to another level, without having to really do anything to it.

Whole Wheat Pancakes

I think breakfast is my favorite meal of the day. I just love everything about breakfast. We even try to have 1 breakfast dinner every week because we love it so much. These pancakes will make a great addition to your breakfast menus. Not only are the delicious but using whole wheat makes them healthier as well. I got this recipe from my wonderful mother in law, who I'm glad is always willing to share her recipes.

Greenie Morning Refresher

Do any of you readers like to juice? I've been experimenting with juicing lately and have made up some pretty tasty concoctions. This one I made this morning though has definitely been my favorite so far. Juicing for me has been such an amazingly refreshing way to start the morning off feeling healthier then ever.
Some of the benefits of juicing rather then throwing it together in a blender is that juicing removes the fiber, making it easier to absorb, and works faster. If you've ever wanted to try juicing but have been slightly intimidated by having vegetables mixed in, this is the recipe you want to try. The combination of fruits and veggies in this recipe work so well together that you don't even notice the veggies.

French Dip Sandwich


I love french dip. It's easy and no matter how you make it, it always comes out tasting delish. I uses to always eat it the classic way with just the meat, horseradish, and bun but lately I've been venturing out and trying some different ways. I believe I have found a keeper. If you like banana peppers you will love this recipe. I love the extra zing you get from cooking the meat with the peppers. Give it  a try. It won't disappoint.

BBQ Meatballs

Meatballs.  You can't get much easier then these for an amazing appetizer that requires no work at all. These bbq meatballs are always a crowd pleaser and I promise you will always have people asking for this recipe. Sometimes I don't like to share how easy it is because they taste like they should take more time and effort.

50-60 frozen meatballs (I like the Italian ones from costco)
9 oz bbq sauce (I use any original flavored kind)
9 oz grape jelly

1. Combine the bbq sauce and grape jelly in the bottom of your crock pot.
2. Add meatballs and stir to coat.
3. Set temperature to high, cover, and cook for 3 hours or low for 6 hours.

**Randi's Side Notes**
- I would keep an eye on these as they tend to brown more on the side that is in the liquid. I like to stir mine when I has about an hour left.
