Cowboy Coffeecake


This is one of Sams favorite breakfast meals. He will even make it every so often. This is a recipe I grew up eating all the time. I still can see my dad pulling out two square tins from the oven almost every weekend and bringing them to the table, cutting his piece, and completely saturating the entire piece in butter. Awe the memories. This ones for you dad!

Smothered Burritos


Okay I have gotten this recipe from a couple of different people now and I thought I had this recipe on here, but realized I hadn't. I make this recipe all the time and it is so delicious and I would almost, probably, say that this is the best recipe ever made lol. Oh yeah and don't judge based on the picture please. I haven't remembered to take a good picture of this one yet so I found this one online of the same thing....which is TOTALLY smothered. I will get a better one up later. But I had to share the recipe now. :)

Poppy Seed Chicken


This is a recipe that I got from my Grandma Weatherston. I had never had it until a few years ago and then all of the sudden I started seeing it everywhere. Maybe I was just out of the loop of this good recipe but its a keeper in my book. Enjoy!

Party Smokies


One of my aunts (who makes the most wonderful food ever) gave me this recipe after one of our traditional Christmas Eve Parties. I think I ate at least a couple dozen of these. This is another appetizer that I always bring with me now. Thanks auntie :)

Spinach-Stuffed Mushrooms


So up until a few years ago I was not a huge mushroom fan. I was at my sister-in-law's house one day and they had made these as an appetizer and I refused to eat them. Basically I was dared to eat one, and to show how brave I was :) I ate one... and now I make these anytime I am asked to bring an appetizer somewhere.

I got this recipe from The Food Network Magazine. I saw a giant piece of meat on a teeny tiny bun and thought, hmm that sounds good to me. The crunch on the pork takes the sandwich to a whole new level, not that I usually put a pork chop on a sandwich...but this works.

Party-In-A-Bowl Potato Salad


This is a different take on your normal potato salad. I love it. I think it tastes so fresh. This is not your typical mayo, mustard, and whatever other "fun" ingredients they throw into it. This one is just so light and really could go with any dish since the flavors aren't sooooo bold. I love how the avacado brings a creamy aspect to it, while the prosciutto gives it a nice little salty crunch. I believe my sister made this once while we were at her house. I love it when we go there because she likes to try out new recipes that she finds online out on us. This one was a slam dunk, so thank you for sharing!!

Super Easy Enchiladas


Okay this is a recipe I totally made up on the spot one night and just started throwing stuff in. They are super easy and adds a little more flavor then your typical meat, onion, cheese, sauce enchiladas....if that made any sense at all. To cut back on the fat try using some ground turkey. Which is what I use mostly nowadays unless I am craving me some beef.

Shrimp Scampi with Linguini


This is a recipe I first made when I was dating Sam and trying to impress him and his friends with my cooking skills. I guess it paid off cuz Sam asks me to make this all the time lol. This is a light and refreshing pasta which I really enjoy when its hot outside.

Who doesn't like bbq chicken?! Throwing it in a quesadilla along with peppers and onion and you have yourself a pretty handy little dinner. Its fast and cheap.

Zucchini-Sausage Casserole



I LOVE this recipe. It's a good way to get some veggies into your meals and hardly taste them :) The flavor of the sausage seeps into the zucchini to cover it up if you don't care for veggies to much. Its creamy and delicious. AND its a one dish meal, pretty much! Who doesn't love a good casserole from time to time? If you do, then you will love this one!

Asian Pulled Pork Sandwiches


I had this recipe first at my sisters house as she was experimenting on us and I loved it. You can make this ahead of time and save it. It warms up very well. This is one of my favorite ways to make pork sandwiches because it isn't your typical BBQ pulled pork. The asian flavors in it are fantastic as a sandwich!

Breaded Pork-and-Mozzarella Stacks


I don't remember where I got this recipe but it is super yummy and just a different way of having your normal every day pork chops. The cheese inside gets all ooey gooey and the crunch on the outside gives it that extra bit of yummy! Plain old pork chops...no way....not with this recipe. Shake it up a bit and give it a try!

Quick Tangy Roast Beef Sandwiches


This is a tangier (not really a word or spelling probably) rendition of the classic bbq sandwich. It's so fast and ridiculously easy! You would never guess in a million years that it is made with tomato soup! SAY WHAT?! Yep, tomato soup. If your on a budget then this is a great recipe for you. If your low on time, this is a great recipe for you. If you just plain like food...then this is a great recipe for you :)

Foil Pack Chicken Fajitas


I like to prepare this dish in the morning or during my breaks, stick them in the fridge, and then when I get home I can just pop it in the oven. This is one of my favorite meals to make. Its easy, fast and has basically everything you need for the whole meal in this cute little packet.
**UPDATE**I have recently started making these with quinoa instead of the instant rice and I LOVE it! If you are cooking for a crowd try throwing it all in a big glass baking dish and just cooking it for a little bit longer. It will be fantastic and they will love it!

Fiesta Chicken Enchiladas


This is by far my favorite chicken enchiladas recipe. They are a dry enchilada instead of covered in gooey sauce. I make these enchiladas probably once a month and whenever I am asked to take food to somebody this is almost always what I end up taking to them. BTW I usually get asked for the recipe afterwards so you should give it a try!

Fabulous Fast Shrimp


I found this recipe a few years ago in a Campbells Soup Book. Its one of my favorite ways to prepare shrimp now. You wouldn't think from looking at the ingredients that this would taste very good but I promise it has a good flavor. Its fast, easy, and affordable if you get the shrimp on a good sale.

Blondie Brownie


This is a close comparrison to Applebees Blonde Brownie. I could eat (and have) this every single day and never get sick of it! If you haven't tried it at Applebees then you my friend are missing out on something special. When Sam and I were dating we used to go there all the time just so we could split one. Now that I have found a recipe that I can make at home, it makes it all the more easier to enjoy it without breaking the bank.

Lonestar Steakhouse Salmon


This is a recipe I found in one of those Top Secret books and I absolutely love it. This is also my all time favorite salmon marinade. I use this anytime I am not in the mood to fix something new. The flavors of the marinade are simply fantastic and can jazz up even the yuckiest looking frozen salmon that you may have in your freezer. Don't lie, we all have it in there, the pieces you aren't sure what to do with but bought it anyway because it was on sale...yep. Cover them in this stuff and you will be wondering why you didn't buy more :)

Spinach Filled Fish Rolls


This is my all time favorite tilapia recipe ever. In fact it was this recipe alone that inspired me to start this blog and share this wonderful recipe. This tastes like something you would order at a restaurant and it looks just as nice as well. I have made this for several people and have had rave reviews every time! Enjoy!
You can make this ahead of time and then throw it in the oven once company comes. It is simply fantastic and looks like you should be working in a restaurant.
