Sausage & Potato Casserole

I figure I have posted enough healthier meals, let's shake things up a bit and talk casseroles. Generally, I am not a HUGE lover of casseroles because let's be real, they don't look that appetizing and I hate that my kids take one look at them and immediately decide that the meal will be disgusting without even trying it.
BUT this is a casserole my entire family is always on board to eat. Is it the most healthy recipe...no...but is it delicious...ABSOLUTELY!
This recipe reminds me so much of my favorite breakfast food, which is biscuits and gravy. Basically, it's a more dinner appropriate version (although I am very much so NOT opposed to having breakfast food for dinner).
I came across this recipe many, many, many (yep I'm old) years ago in some random cookbook I used to have. The funny thing is, the recipe didn't have a picture (probably because casseroles are not fun to photograph). I almost NEVER make recipes if I have not seen a picture of it but for some odd reason I had decided the ingredients sounded good enough on their own that I was going to give it a try. I'm glad that I did, because this dish is one of my husbands favorites now.
Not gonna lie, this recipe is more labor intense then I generally like because I like things super easy, and it does dirty up a few extra pots and pans, but, it's worth it.

Korean Beef

I found this recipe one day when I was searching for a REALLY fast dinner idea that would use things that I would have on hand because honestly lately I have been despising going to the grocery store! I'm sure I'm not the only person who HATES going anywhere in the summer, so if this is also the case for you, then this is your recipe. This recipe is jam packed with flavor and is done from start to finish in less than 30 minutes, so that's my kind of meal. I like to serve this beef on top of hot rice and broccoli.

Gnocchi Alla Sorrentina

Don't be scared off by the fancy title. In our house it is known as the "yummy red sauce". This is my husbands favorite way to eat gnocchi hands down. This sauce is filled with two different types of cheese which makes it incredibly delicious. The flavors are simple, which is what I like best about it because you really get to taste each ingredient.
You can either use this sauce alone with some boxed gnocchi or you can try making your own homemade gnocchi. I shared a great gnocchi recipe yesterday on the blog and it can be found here.

Shepherds Pie

I happened to have a massive amount of mashed potatoes left over from Thanksgiving that I had put in my freezer. (In case you didn't know, yes, mashed potatoes freeze beautifully!) I've been eyeing them up every single time I have opened the freezer and been trying to figure out when I would use them. Then it came to me. Shepherds pie duh!
This recipe has been in my family for as long as I can remember. I remember eating this all the time growing up and it is a staple in our home now. I have not changed much about the recipe from when I was a child because why ruin a good thing. This is such a homey dish. There is just something about a big ol' pile of this that makes me feel all warm and cozy inside. I'm usually not a huge fan of casserole style meals because they just don't look that good, but I really need to get out of that mindset because they always taste good and have everything in one dish so you don't feel the need to make a ton of sides.

Zucchini-Sausage Casserole



I LOVE this recipe. It's a good way to get some veggies into your meals and hardly taste them :) The flavor of the sausage seeps into the zucchini to cover it up if you don't care for veggies to much. Its creamy and delicious. AND its a one dish meal, pretty much! Who doesn't love a good casserole from time to time? If you do, then you will love this one!
