BBQ Chicken Quesadilla
I got this recipe from my sister who cooks some of the most amazing food ever. Thanks a bunch sis! :)
Who doesn't like bbq chicken?! Throwing it in a quesadilla along with peppers and onion and you have yourself a pretty handy little dinner. Its fast and cheap.
BTW... I don't know any exact measurments on this one sorry :(
Bulls Eye BBQ Sauce
Dash of cayenne pepper
Dash of chili powder
Tortilla Shells
Shredded chicken
Jack Cheese, Grated
Cheddar Cheese, Grated
Red onion, diced
Red Pepper, diced
Yellow Pepper, diced
Green Pepper, diced
Olive oil
First, in a small pan pour olive oil and saute red onion and peppers until they reach your desired crispness or soggyness :)
Meanwhile, get a small bowl and mix about 1/2 cup of BBQ sauce, cayenne pepper, and chili powder.
Spread some BBQ sauce mixture onto tortilla shell. Aplly a small layer of chesses. Then top with as much shredded chicken as desired. Add as many of the cooked onion and pepper mixture as you want. Top with some more of the cheeses. Add another tortilla on top with more BBQ sauce on it.
Cook on a grill pan on med heat until crispy on both sides and cheese is gooey.
**Randi's Side Notes**
~My sister said this is really good if you add some crumbled bacon. I have yet to try that.
~I like to use red, yellow, and orange peppers but all taste good.
~If you want more spice...just add some more to the BBQ sauce, if you like less...don't add any spices at all.
