Zucchini-Sausage Casserole



I LOVE this recipe. It's a good way to get some veggies into your meals and hardly taste them :) The flavor of the sausage seeps into the zucchini to cover it up if you don't care for veggies to much. Its creamy and delicious. AND its a one dish meal, pretty much! Who doesn't love a good casserole from time to time? If you do, then you will love this one!



8 oz. pork sausage
2 medium zucchini
1/2 can cream of chicken soup
1/2 cup sour cream
2 cups chicken flavor stuffing mix
3 TBSP butter melted

1. Brown sausage in skillet and drain off fat.
2. Cut up zucchini and add to skillet.
3. In a small bowl combine soup and sour cream; stir into sausage-zucchini mixture. Set aside. In a large bowl combine stuffing mix and melted butter.
4. Spray a glass baking dish. Spoon half of the stuffing mixture into the prepared dish. Spreak sausage-zucchini mixture over stuffing. Spoon remaining stuffing evenly over the top. Bake, covered, in a 350 oven about 30 minutes.
