Aebleskivers

Not sure how to say the name of these babies? That's okay, my husband calls them Eberskeebers because it sounds funnier and knows it bugs me. The correct way to say these though is able-ski-vers. Still not sure?? Just call them Pancake Puffs, it makes life more simple :)
Unfortunately, you do need a special type of pan for these babies, but Amazon saves the day if you don't have one. THIS is the style of pan that I have and have been using it for years.
These babies are delicious! If you like pancakes, then you HAVE to give them a try. They puff up to be about the size of a golf ball. At our house, we like to eat them dipped in plain old syrup but I have stuffed them before with nutella, jams, and chocolate.

2 egg whites
2 cups flour
2 tsp baking powder
1 TBSP sugar
1/2 tsp baking soda
1/2 tsp salt
4 TBSP melted butter
2 cups buttermilk
coconut oil for frying
wooden skewers for turning

1. In a medium size mixing bowl, beat your egg whites until stiff peaks form. Set aside.
2. In a large mixing bowl combine the flour, baking powder, salt, baking soda, sugar.
3. Add buttermilk and melted butter and whisk to combine.
4. Gently fold in the beaten egg whites.
5. Heat aebleskiver pan over medium heat (depending on your stove you may want to reduce the heat to medium low to ensure your puffs get cooked all the way through).
6. Add 1/4 tsp of coconut oil into the bottom of each slot.
7. When coconut oil is melted fill the slots 3/4 of the way full with the batter (I like to use a small cookie scoop)
8. When the batter begins to get bubbles on the top and the sides are becoming dry and golden it's time to turn them.
9. Using your skewers quickly turn the puffs over (everybody has a different technique but I usually will poke one skewer down the side of a puff. This will raise the opposite side slightly out of the pan allowing you to use the other skewer to help maneuver the puff all the way over. It takes a bit of practice)
10. Continue to cook another minute until the other side has become golden brown.
11. Remove from pan using skewers and serve hot with whatever toppings you desire.

**Randi's Side Notes**
~ If you choose to fill your aebleskivers you can either buy an injector and fill them after they have been made, or when you are in the process of turning them over you can add the filling once you have already begun flipping it (so once you have pushed down one of the sides and batter has begun to fill the bottom, add the filling and finish flipping it over on top.)
~ This recipe does make quite a few so if you have leftovers you can store them in a reusable bag in the freezer and pop in them in the microwave when ready to use.
