Chocolate Cupcakes

Let's get a little unhealthy for a bit and talk dessert. I LOVE IT!
This cupcake recipe came together so quickly! Seriously, it didn't take that much more effort then whipping out a box from the pantry, and taste way better. These cupcakes and literally the most light and airy cupcake I have every had in my life.  Not only are they airy but they are moist as well! One important detail about these cupcakes is using hot water. When the hot water reacts with the cocoa powder that is where the magic happens and you get the perfect light chocolate flavor all while keeping the batter nice and airy and moist.
Pair with your favorite frosting recipe and these babies will be gobbled up in no time!


1 cup all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
1/2 cup buttermilk, room temperature
1/2 cup coconut oil, melted
1 teaspoon vanilla
1/2 cup very hot water


1. Pre-heat your oven to 350ยบ F and get line your pan with cupcake liners. (Yes I know my picture doesn't show the cupcakes in liners but I used them).

2. Using a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt and whisk until well combined.

3. In a small mixing bowl, combine the egg, buttermilk, and vanilla and whisk until well combined. Slowly add in the melted coconut oil and whisk continually until incorporated. 

4. Add the wet ingredients to the dry ingredients and mix for 2 minutes. (Using a hand mixer or stand mixer will speed up the process and give you less of an arm workout).

5. Add the hot water to the batter and mix again, scraping the sides of the bowl as necessary, until combined. **THE BATTER WILL BE VERY THIN**

6. Fill cupcake liners HALF WAY FULL (this is important), and bake for 18-21 minutes, until a toothpick comes out dry.

7. Remove cupcakes from pan and cool completely before frosting.

**Randi's Side Notes**
~ This recipe will make roughly 14-16 cupcakes depending on how closely you stuck to filling them only half way full.
~ Over filling the liners will result in cupcakes that don't get that beautiful dome.
