Spicy Honey Chicken
This is a new recipe that I tried at my in-laws house and I must say... YUMMY!!! If you haven't already become a major "Our Best Bites" addict like myself, then you should because this recipe came from their cookbook. I know grilling season is almost over, so you better hurry and try this one before you forget about it!
8 boneless skinless chicken thighs, about 2lbs
2 tsp vegetable oil
Rub:
2 tsp granulated garlic
2 tsp chili powder
1/2 tsp onion powder
1/2 tsp coriander
1 tsp kosher salt
1 tsp cumin
1/2 tsp chipotle chili powder
Glaze:
1/2 Cup Honey
1TBSP Cider Vinegar
1- Preheat grill to medium-high heat.
2- Combine rub ingredients in a small bowl.
3- Trim any visible fat off the chicken thigh, rinse, and pat dry with a paper towel. Drizzle oil over chicken and rub it in with your hands. Rub the spice rub into the chicken thighs. Grill for 3-5 minutes on each side.
4- For the glaze: while chicken is cooking, warm honey in the microwave for about 15 seconds. Whisk in vinegar. Reserve 2 TBSP glaze and brush the rest on the chicken in the final moments of cooking. Remove chicken from the grill and allow to stand 3-5 minutes. Drizzle reserved glaze over the chicken just before serving.

**Randi's Side Notes**
~ If you are wanting this to be a diet approved recipe you would need to not put the glaze on. I haven't been able to figure out something that would be a good honey replacement so if you do, then by all means share away!
~ When I made this I actually spaced it on the glaze part until the chicken was already off the grill. So I hurried and drizzled it over the top and threw it under the broiler for just a minute, and it tasted just fine.
~ We used chicken breasts when making this and it tasted good as well.
