Kale Chips



Okay don't be completely turned off by these if you haven't given them a chance. If you are craving something crunchy like a potato chip lets say but your trying to eat a little healthier, then these are a great alternative. They crisp up just like a potato chip and actually have a pretty good flavor as well. The first bite I had I was skeptical but then after popping a few more in my mouth, and later finishing off a whole bowl full, I decided that these are a pretty tasty little snack.



1 bunch of kale
olive oil
kosher salt
garlic powder (optional)

So basically just wash and dry your kale and rip it up into chip sized pieces. Place on a baking sheet and drizzle with olive oil. Sprinkle with salt and whatever other seasonings your little heard desires. Toss to coat all the pieces in the oil mixture and spread in a SINGLE layer on the baking sheet. (You may need to do a couple of batches in order to do a whole bunch of kale). Make sure that you aren't overlapping any of the pieces because if they overlap at all they will not get crispy.
Bake at 375 for 15-20 minutes, give or take depending on your oven. (keep a close eye on them so they won't burn)
Pull them out and ENJOY!

**Randi's Side Notes**
~ Now I have seen people sprinkle with Parmesan cheese when they come out.(Don't try this obviously until you can have cheese in your diet).  The seasoning combinations are endless so just play around with whatever kind of chip seasonings you like.
~ I have also had these with some lemon pepper seasoning, olive oil, salt, and a squeeze of lime mixed together before baking...fantastic.
~ When I say keep a close eye on these...I mean it. They can go from looking perfect to burned in a matter of seconds.
