Cilantro Lime Chicken with Guac
What's for dinner? Chicken. What did you eat for lunch? Chicken. What are you making for breakfast? Probably chicken. But I am actually okay with it because chicken is so versatile. My favorite recipes are always going to involve some form of Mexican flare to them. There is just something about adding cilantro and avocado to a recipe that makes my taste buds jump with joy.
This recipe is fantastic. Letting the chicken marinade in all the yummy goodness and topping it with this awesome guacamole really make me happy. I paired mine up with some black beans and cilantro and lime cauliflower rice (recipes to follow).

Garlic Baked Salmon
This past year I decided to buy 20 pounds of Alaskan Salmon from Zaycon foods. First off, it's amazing. Second, since I bought so much salmon and wanted to eat it almost every week I have had to find some new ways of cooking it.
This ladies and gents has become my new favorite way to cook it. It's fast, simple, full of flavor, AND there's hardly any cleanup because you cook it in foil.
If any of you know my 5 year old, you know she doesn't eat anything. Like....ANYTHING. But she loves this recipe and always has a large helping of this salmon. I call that a win.

Almond Flour Pancakes
Usually I am a gluten lover. I LOVES ME SOME GLUTEN! But I have been trying to cut back a little bit and try out some different recipes that still taste good. This recipe is great. It is made with almond flour, which I love and is also dairy free, soy free, and grain free. These pancakes have become a staple in my home for breakfast. The flavor is good and the consistency is similar to a whole wheat pancake.

Banh Mi Rice Bowls
This version is, obviously, not a sandwich. One thing that makes a good Banh Mi sandwich is the rolls they use and I was not about to butcher those amazing bits of goodness so when I found a recipe using the same flavors they put inside the sandwich but served over rice I knew this was a version I would feel comfortable making.
One thing I love about this recipe is you have your hot cooked rice and meat served with crunchy fresh pickled vegetables, fresh raw vegetables, and cilantro (which I am obsessed with).
Guys...this stuff is awesome. I have made this recipe multiple times for multiple people who have come to stay at our house and every time I have been asked for the recipe.

Glazed Ham
I probably should have posted this recipe before Easter but for some reason I thought I had posted about it years ago. Hopefully some of you bought hams on clearance and will now be able to use this recipe next time.
I love ham. We have a small family but I still buy a huge ham every Easter season so that I can make all the yummy leftover ham recipes. I usually just buy the spiral cut hams that have that yummy glaze with them, but sometimes I opt to buy the cheaper non spiral cut ones and make my own glaze. THIS ladies and gents is a keeper of a glaze. It's sweet and has the perfect flavors that pair nicely with the ham.
