I love pork chops. Usually they are a decent price and cook pretty fast. I have always cooked my pork chops the same way, in a pan on the stove with salt and pepper. So I ventured out to find a new way to cook them and came across this beauty of a recipe. This is great. The spice flavors are fantastic and I love the crunch the breading gives them. This will definitely be in the rotation of recipes for me.

Kung Pao Spaghetti
Wow. I've had this recipe pinned for quite a while and I've looked at it several times thinking I bet this dish is awesome. In the original posters blog post she mentioned that it was to mimic a dish found at California Pizza Kitchen. Well I had never been there when i first came across this recioe but a couple of months ago I decided to go with some girlfriends and my goal was to get this dish to decide whether I should make it at home. Super long and ridiculous story cut short, the dish I got at CPK was way to spicy so I sent it back and opted to not try this recipe. Well finally last week I looked at it again because I knew I had all the ingredients on hand and I needed something to throw together. Wow. I'm really kicking myself for waiting so long to try this one out. It's so incredibly simple and full of amazing flavor. My husband asked that we keep this as one of our go to dishes so that's saying a lot in our household.

Sausage Gravy over Biscuits
Anyway, to the recipe. Anybody who knows me knows that I love biscuits and gravy. I can be at the yuckiest motel breakfast buffet and still pour me a gloopy glob onto a hard biscuit if it's available. I don't know why. So finally a couple of months ago I decided I should try to make my own. And boy am I glad I did. I love this recipe. I made this recipe every week for a month till I burned myself out for a bit (and gained a food 5 pounds lol). Now that I'm getting around to typing this up I'm starting to crave it again. I hope you enjoy this recipe as much as I did.

Alfredo Sauce
I am a lover of everything smothered in Alfredo sauce! My husband loves it as well. In fact, every week while I am planning out my menu for the following week I ask him one meal that he would like to have that week and every time it is "oh I don't know, maybe some chicken with some penne and some alfredo sauce?" LOL. (Does anybody else's spouse offer the same opinion every time on food when asking what they want each week?! I have begun wondering if they do this on purpose so you will stop asking or if they really just like the same thing to eat??)

Pan Fried Italian Thighs
Oh baby! This recipe is a keeper. I don't think my husband has ever given so much praise in his life over a meal, let alone chicken thighs. He gobbled these babies down so fast and he even ate the skin which he never does! I have to agree with him, these chicken thighs are simply AMAZING!
The ingredients are super simple and ones that most people have in their pantry already. The thighs come out super crunchy on the outside but super juicy on the inside. You will not be disappointed with this recipe. AND you can totally switch up the seasonings on the outside to suit whatever your taste buds are in the mood for that day! Enjoy!

Asian Turkey Meatballs
Okay when I think of meatballs I usually don't think of them as having an Asian twist. Well I guess I have had like a sweet and sour meatball before BUT nothing like these. This recipe was so light and refreshing AND incredibly easy to make! Summer foods to me are all about keeping it simple and light since its so stinking hot outside.
These make a great dinner or you could totally use them as an appetizer.
The lady who came up with the recipe served hers over a bed of spiraled zucchini, which looked awesome. I however don't have a spiraler so I just had mine plain with the dipping sauce with a side of zucchini and quinoa.

Chicken and Asparagus Stir Fry
Something I love about summer is that keeping meals light and simple. This recipe is so refreshing to me. It has classic Asian ingredients that just seem to pop with freshness.
I also like cutting everything into smaller pieces because that allows the cook time to be way less, which means that my kitchen doesn't have to be super hot for a long time. Now right now asparagus in most places is not at its cheapest, usually it is best in the spring, I when I made this recipes I actually used green beans which were a great substitute.

Salmon with Nectarine Salsa
I had to get this recipe on here asap! This recipe is fantastic! Technically this is two recipes but I am going to just keep them as one because they go so well together!
I'm always a little hesitant when it comes to "fruit salsas", because for some reason in my head I think eww fruit and spice equals no. BUT this salsa is absolutely fantastic!
The salmon recipe alone is great, but, adding the salsa on top of it takes it to a whole other level of amazingness! This will be one recipe we will be having over and over this summer. It's so light and refreshing.

Garlic and Mushroom Quinoa
Wow! I apologize that it has been so long since I have posted any recipes. I got into a recipe slump and just kept making the same old things every week. This week I decided to break out some new recipes. I wanted to try out some new recipes that could be part of the Anti-Inflammatory Diet.
I seem to always have the same side dishes when I do cook those foods so I wanted to branch out a tiny bit. This time instead of making my normal plain old Basic Quinoa (which is great) I decided to throw in a couple other ingredients to jazz it up. It turned it great, and so versatile.

Honey Mustard Pretzel Chicken
What a delicious recipe. I have seen this recipe go around Pinterest now for quite a few months and have pinned it quite a few times but just hadn't gotten around to testing it yet. Well I'm sure glad that I did because it was a big hit at our house. Lately it seems that my little 2 year old doesn't like anything so when she gobbled this stuff down I knew it was a keeper!
I love that you put the chicken in the sauce to hold the coating on rather then an egg mixture. I think it really helps add some flavor to it while keeping it nice and moist!

Pie Crust
So a couple of days ago was "PIE DAY" (3.14) so while we were at the store and saw some beautiful strawberries I told my hubs that I would make us a fresh strawberry pie.
Anybody who knows me knows that I do NOT make pie. I have always been under the impression that it is super hard and time consuming and blah blah but then every time I make a pie I say to myself "self: why do you think this is hard? THIS IS EASY!"
Today I will share with you a recipe for a fantastic pie crust that I got from my mother in law. She makes the best pies I have ever eaten in my whole life and a lot has to do with this fantastic crust recipe. It is so flaky and perfect. Tomorrow I will share the recipe for the fantastic fresh strawberry filling to go inside!

Coffee Cake
Oh coffee cake. I know that when you think coffee cake most people think of the spice cake that has the brown sugar topping on it. In my household that is known as "Cowboy Coffee Cake". So when I hear coffee cake this is what I think of. Every Christmas, Easter, General Conference, etc. my mom would make this for us and it was always my favorite.
I haven't had this in such a long time because my husband is not a fan of cooked fruit so using jam in anything is out of the question. But I have been craving some of this yummy deliciousness lately so it might just have to happen anyway!

Creamy Italian Chicken and Rice
I love this stuff. In our family this is known as "Marty's Yummy Chicken and Rice". My sister was the one in our family to discover this amazing recipe many years ago and has long since been passed around and is a favorite in most homes.
This recipe is so simple and has great flavor. You just throw everything in the crock pot and let it do its magic. I like to serve mine up on top of some nice rice but I know some people serve it up over noodles instead. Either way is great.

Sweet N Salty Coconut Chips
OH MY! If you are looking for a healthy sweet and salty snack oh man...these babies are it. One of Sam's patients brought some into them the other day and he brought some home for me to try and they were out of this world! I went right out and bought some coconut flakes and made them the next day!

Autumn Salad Anti-Inflammatory
If your in need of something light and fabulous tasting then this recipe is one that you have to try. It uses a lot of ingredients that a lot of people have on hand and is full of flavor. Leave off the chicken for a nice side salad or throw it on and make it a nice light meal. I love how there is so much crunch and flavor in this salad. I will definitely be having one of these for lunch again today!

Mashed Cauliflower
I have seen mashed cauliflower pop up all over pinterest lately and have been putting it off to try because it sounded a little bit to weird to me. How can cauliflower taste like a mashed potato....yep that is the question ladies and gents but I will tell you what...for some strange reason it really does taste extremely close! I was shocked at how much it really did taste like a heap of mashed potatoes. Mashing cauliflower is lower in carbs and makes for a great alternative if you struggle with potatoes. In fact I know some people will even mix half and half (potatoes and cauliflower) and then you really can't tell a difference at all!

Mexican Chicken Tacos
This is an Anti-Inflammatory Pulled Mexican Chicken recipe that has been adapted from another family favorite recipe of mine. The original recipe had pork and a couple of seasonings that have to be omitted to make this anti-inflammatory, but this still packs in great flavor!
I love Mexican food so much. The flavors are just everything that's good in the world.
Cooking the meat in the slow cooker allows the flavors to really develop in the meat while making the meat nice and tender, also making it easy to shred.
One thing I love about shredding meat is that it makes it go a long way. So this is also a budget friendly meal.
I like to serve this chicken plain, over a nice salad, served on top of a quinoa and black bean bowl, or in a homemade anti-inflammatory tortilla.

This is a fantastic marinade for chicken. At first I was a little skeptical because it marinades in coconut milk but I'll tell you what...Its like chicken curry without all the soupy mess! Grill it, fry it, bake it, who cares. Just cook it and get that jazzy bit of song in your belly! I bet you money that while you are zesting your lime and have that can of coconut milk sitting next to it, you will be humming that tune just like me. (Okay I won't actually bet you money because frankly I always lose bets and don't really feel like dishing out a bunch of money to people I don't even know)
Top it off with some fresh squeezed lime juice and cilantro and you've got yourself a tangy delicious bit of chicken!

Breakfast Quinoa
Now I am the first person to tell you that Quinoa is not one of my most favorite things to eat. After trying out a few different ways of having it for dinner and almost wanting the throw it right back up I decided to give it a chance for breakfast. I came across this recipe from one of my most favorite food sites skinnytaste.com and you know what...its actually good. Coming from me that is a pretty big statement because I can't stand the stuff to be honest. The first time I did this diet and did quinoa for breakfast I did everything I could think of to just choke the stuff down. Needless to say I never really looked forward to waking up and eating because I hated it so much.
BUT NOW...I have found this fantastic recipe that makes it taste a lot like cracked wheat cereal. And of course, is anti-inflammatory diet friendly. Enjoy!

Lime & Chili Chicken Anti-Inflammatory
As the weather has started turning colder I have been trying to break out all the grilling recipes I can find so that we can survive the winter without the grill. I came across this recipe on the Betty Crocker website. This was sooooo incredibly easy to make and tasted really good.
This recipe does have a bit of a kick to it, so be warned. If you don't like it quite as spicy then just tone down some of the spices a bit.

Spicy Grilled Chicken
This is a great spicy recipe that is juicy and full of flavor. I love using the grill because its hard to mess meat up. I have used both chicken thighs and chicken breasts for this recipe and I prefer the thighs but the breast works fine. This would be great with some Grilled Zucchini and you could even try grilling up some sweet potatoes with a little olive oil, salt and pepper. (I personally have never tried to grill a sweet potato so I would love to hear how it turns out if you try it!)

Easy Greek Roasted Chicken
Ok I saw this picture of a recipe on Pinterest and I knew it was something that I must try! Doesn't this picture just scream "I'M DELICIOUS"?! Well it did to me and I am here to tell you that it did not disappoint.
Not only is this chicken FULL of awesome flavor but its ridiculously easy. You just throw everything in the pan and let the oven do all the work.

Loaded Philly Cheesesteak Potatoes
This is such a great recipe. This is the perfect weeknight meal. Its super fast, easy, and pretty healthy for you as well. If you cook your potatoes in the microwave then your meal will seriously be done in less then 20 minutes. That's pretty fantastic if you ask me!
