Lentil Curry Soup

So it's been a while. I go through these periods of time where I get really into blogging and then I need a break. But, here is one of our favorite soup recipes. We make this quite often at our house.  This stuff is great.
This soup recipe is one that is not only warm to eat but is full of those delicious warm curry flavors. I love it so much!
Besides the flavor being amazing, another awesome thing I like about it is that it comes together pretty fast which makes it great for a weeknight meal.
This soup is great for many dietary needs. It's anti-inflammatory which is awesome for me as I have been trialing foods right now.
Every week we try to do a meal that doesn't have any meat in it. This is a great recipe if your trying to cut out some meat because having the lentils in it makes it very filling.
*This picture isn't the most appetizing to look at but I promise it is worth trying!!!*

Chicken and Lentil Soup

It has really begun getting colder here lately and I for one have not been ready for it. I hate being cold, so when I have been planning my meals all I can think of is soup. What is it about soup that just warms the body so well!?
This has become one of my families favorite soups over the years. I think one of the reasons we like it so much is because it has more of the Spanish flavors that we like. I also love the fact that it is jammed with delicious lentils. I love lentils. Especially in soup. You won't regret trying out this soup recipe because it's got amazing flavor and is packed with protein.

Homemade Chicken Broth

Oh chicken broth. We love this stuff so much at my house. Whenever I get a rotisserie chicken from Costco or have leftover bones from any kind of chicken (or turkey) I make broth out of it and store it in the freezer for a rainy day.
When one of us is sick at our house we heat up some of this yummy deliciousness and it makes us feel so much better! Its a great way to get a lot of nutrients into your body.
I use this for all sorts of recipes. I especially love it in my Homemade Chicken and Quinoa Soup! It is a great start to any soup to be honest :)
You will not be sorry you tried making your own homemade broth, and may not even go back to buying that store bought kind because this stuff has so much more flavor!

By the way, I just want to give a big shout out to my wonderful followers.  Man, I really do appreciate all of you who follow my blog and enjoy these recipes. It really makes me happy to know that sharing great recipes can really help people enjoy being in the kitchen. I appreciate all of your comments as well! When I see that I have new comments it seriously makes my day a billion times better! SO THANK YOU!

Butternut Squash Soup

It's soup season! I love fall. The leaves changing, the weather getting cooler (although it's gotten cold to fast for me this year), and the general bout of excitement that seems to be in the air for the rest of the year because there are so many awesome holidays over the next few months! I'm not usually a craver of soup but I feel like our family has been sick with something new every couple of weeks this season so we have been enjoying A LOT of soup at this house. There is just something about being sick and eating an awesome bowl of soup that makes everything in your body feel better, for the 10 minutes it takes to eat it 😁
Anyone who knows me well knows that fall flavors are generally not my favorite. I avoid Pinterest at all costs once September hits because all I see on there is "Pumpkin this" and "Squash that". Pumpkins should be carved...not eaten...JUST KIDDING! I came across this recipe in a cookbook and it screamed fall flavors. Like I stated above, I usually go right by a recipe like this, BUT, for some odd reason I decided nope we are going to try it. GUYS!!!! I am so glad I did. Who knew butternut squash could actually taste okay?! 😂
This soup has so many "warm" spices in it that roast in the oven with the butternut squash helping the squash to develop some really tasty flavors! So if you are looking for a delicious soup that screams fall, you need to give this one a try.

Zuppa Toscana Soup

This is one of my favorite soups ever. I made this recipe the other day and it tasted exactly like the one at Olive Garden, probably even better. Is it the healthiest of soups? No, but it is delicious regardless. Plus, it has kale in it, so I figure having that addition makes it healthy right?
It has been off and on cold here lately which has really been getting me in full blown soup mode. This recipe is the perfect way to warm up the body and get you in the mood for cooler weather!
I have made this soup in a variety of ways, on the stove, in the slow cooker, and in the pressure cooker. They all taste the same and turn out great, so you can pick the method that works best for you!

Ham and Potato Soup

Typically I make this soup around Easter when I have a lot of leftover ham in my fridge that needs used, but the weather took a sharp turn this week and decided to become a frozen nightmare and I REALLY wanted soup. Not just any soup, but this soup. Thankfully, I actually did still have some leftover ham in my freezer from Easter :) Had the ham been in my freezer a little to long? Probably...did I care...not really. It still tasted fantastic and that's all that matters right?!
This soup is ready in under 30 minutes which makes it the perfect weeknight meal, especially on those nights where it's frigidly cold outside.

Chicken and Andouille Sausage

This right here is one of my favorite Anti-Inflammatory recipes ever. I love how the flavors of the ingredients give the broth such amazing flavor.  The andouille sausage gives the broth the slightest hint of heat, which I love. This dish is great to serve on any day of the year because you can make this as soupy or not as you like. When it's hot outside I generally don't add as much of the liquid because I'm not a huge soup fan when its hot, but when it's cold, I add a LOT more of the broth and less of the quinoa to make it feel more soup like.
*I know the picture doesn't look that appetizing with the chicken having the skin on, but leaving the skin on while cooking helps add more flavor to your broth. You can also remove the skin before cooking to have less calories and it will still taste great.

Broccoli Cheese and Potato Soup

Today I woke up with what seems to be the beginning of a wonderful cold. So I found it fitting to post about this wonderful creamy soup.
This soup comes together in under 30 minutes and is full of so much flavor you won't even miss the fact that there isn't any meat. This to me is pure comfort food.
Im usually not much of a soup maker, for some reason, but I have decided that this year I am going to branch out a little more and dive more into soups. Why? Because they don't create many dishes to clean up afterwards and they can usually come together pretty quick!
Later this week I was planning to make some baked potatoes with broccoli cheesy sauce so I saw it fitting to post this today, to show another way you could use the exact same ingredients!

Chicken & Gnocchi Soup

The other night I was really wanting some comfort food and since I have been kind of on a soup kick lately why not have another soup. I couldn't stop getting Olive Garden out of my head.
This is my 2nd favorite soup from the Olive Garden. But alas, my husband and I knew that we were already going to be eating out this week on another night so I had to improvise and have the restaurant come to me. So I made a whole evening out of it.
Not only did I make this soup but I made a copycat version of their bread sticks as well and served it with yet another version of their salad. Topped the evening off with some Andes mints and hey we had a wonderful date night at home (AND IT COSTS A LOT LESS TO)
This soup was wonderful. It tasted very similar to the one at Olive Garden. Its also incredibly easy to prepare and doesn't take long at all. Perfect for a fall weeknight.

Colombian Chicken Sancocho

Okay all. I broke way out of my comfort zone the other night and made a Colombian dish in honor of one of my best friends down here. She has inspired me to branch out and try some new ingredients while at her home so I figured I should give some of them a try on my own. Guess what?! IT WAS A SUCCESS! My husband had two big bowls full of this soup, and that says something as he is not usually a huge eater. The chicken turns out super tender and moist and the broth is full of flavor. Give it a try, you won't be disappointed. I served mine up with a side of quinoa and would have had some sliced avocado as well but when I went to pull one out, they were all mushy and bad.

Italian Turkey Meatballs

If you are looking for a lower calorie and still fantastic tasting meatball then give this recipe a try. Ground beef? Who needs it when you can jazz up some extra lean ground turkey and save a few million calories :)
These meatballs are so flavor packed that you won't even miss the extra grease.
And in my personal opinion if your meatballs are good, then you don't have to go completely extravagant on your sauce. These meatballs are great in spaghetti, as subs, in a soup, or plain! I've tried them all three ways and they are simply fantastic. Give them a try and let me know what you think!

Chicken and Quinoa Soup

The other day I was craving some good old fashioned chicken noodle soup. I have no idea why since it was over 100 degrees outside but for some reason I couldn't get it out of my head. So I headed to the fridge and pantry to see what I could use and this was this is what I ended up with. It was great. Now I personally didn't want to make homemade noodles and I also didn't want to add egg noodles because I wanted it to be able to work for those who are doing the diet that Sam uses for his work. This is a good base recipe for the soup. By all means feel free to toss whatever veggies or whatever tickles your fancy. I just personally wanted mine nice and basic. Enjoy!
(BTW aren't my photography skills amazing 😂😂😂)

Baked Potato Soup

Since its snowing outside when it is supposed to be nice and sunny it got me wishing that I had a nice pot of my favorite homemade soup on the stove. This is pretty much the only soup that I make from scratch probably because its really easy. Hmm maybe I need to start branching out a little bit.
