In my home, it just isn't Christmas until I have had a nice cold glass of Eggnog! This recipe is one that I have been making for years and is a family tradition from my childhood. There are two things I remember about Christmas as a kid, opening presents and making Eggnog with my mom.
If you are thinking, but store bought is so much easier and tastes good...true it is easier, but not by much AND homemade is SOOOOOO much better! Seriously. If you have never made it, you HAVE to try it.
As stated in the title, this version does not have any alcohol in it, sorry, but it does have some rum flavoring in it so you still get the right flavors going on in it.
1 small package (3.4-3.9 oz) Vanilla pudding (cook and serve)
1/2 cup sugar
1 quart and 1/4 cup milk
3 egg yolks, slightly beaten
3 egg whites
1 tsp. vanilla
2 tsp. rum flavoring (when 3x use start with 4 tsp and go to taste)
1 cup whipping cream (optional)
nutmeg (optional)
(3 times the recipe to make a gallon of eggnog)
1. In a large pot, combine pudding mix, sugar, and 1/4 cup of milk.
2. Add slightly beaten egg yolks and blend well with whisk. Cook over medium heat, stirring constantly until mixture comes to a full boil (about 10 minutes).
3. Remove mixture and let mixture cool completely.
4. When mixture has cooled, beat egg whites until stiff peaks form.
5. FOLD into the cooled pudding mixture.
6. Add vanilla, rum flavoring, and remaining milk and stir to combine.
7. Pour into container (I use an empty milk container) and chill several hours.
8. Sprinkle with nutmeg before serving.
**Randi's Side Notes**
~ You can totally make this recipe your own. Toppings that I have seen are cinnamon sticks, whipped cream, nutmeg, all sorts of things.
~ My favorite dairy milk substitute for this recipe is coconut milk.
