Kale Chips



Okay don't be completely turned off by these if you haven't given them a chance. If you are craving something crunchy like a potato chip lets say but your trying to eat a little healthier, then these are a great alternative. They crisp up just like a potato chip and actually have a pretty good flavor as well. The first bite I had I was skeptical but then after popping a few more in my mouth, and later finishing off a whole bowl full, I decided that these are a pretty tasty little snack.

Crockpot Refried Beans



Who knew that making refried beans at home could be so easy?! I always thought that you had to sit at home and keep a close eye on them all day and night for 24 hours! Well hate to break it to you but if you want REALLY authentic tasting ones you will be told that that is the only way to do it....OR you can do it this MUCH easier way for the same flavor without really having to watch it at all! My sister found this recipe off of Pinterest (everyones best friend when it comes to looking for something tasty to make). The original recipe (for the fat free kind) makes so much that I end up cutting it in half and still freeze enough for another meal at least! These beans freeze beautifully and warm up is easy breezy! These are good all alone, or loaded up with cheese, or mixed in with spanish rice, whatever floats your boat! Enjoy.

Breakfast Quinoa


Now I am the first person to tell you that Quinoa is not one of my most favorite things to eat. After trying out a few different ways of having it for dinner and almost wanting the throw it right back up I decided to give it a chance for breakfast. I came across this recipe from one of my most favorite food sites skinnytaste.com and you know what...its actually good. Coming from me that is a pretty big statement because I can't stand the stuff to be honest. The first time I did this diet and did quinoa for breakfast I did everything I could think of to just choke the stuff down. Needless to say I never really looked forward to waking up and eating because I hated it so much.
BUT NOW...I have found this fantastic recipe that makes it taste a lot like cracked wheat cereal. And of course, is diet approved. Enjoy!

Chicken Fajitas

 I've decided that you can't go wrong with chicken fajitas. They are loaded with flavor and you don't have to put them in a tortilla to make them taste good. You can serve this up as is, chopped up over a salad, or try your hand at some quinoa tortillas (which I have personally never done, but wanted to try).

So here's for you gluten free, dairy free, soy free.....yes the list is quite long so I will stop there

Snickerdoodles


I haven't had snickerdoodles in quite a while so I can't say if this recipe that I found online is better then the recipe I got from my mom BUT...this is a good recipe none the less. I was able to get 24 cookies out of this recipe.

CrockPot Teriyaki Chicken


Holy easy and delicious!! Sam had been requesting that I make chicken teriyaki rice bowls for a little while now and I finally broke down and found a good recipe. Thank you Pinterest! All you do is put pretty much everything in the crockpot, set it, and....forget it. :)
Crockpot recipes are my favorite because cooking it all day in the juices really gets that flavor deep into your meat. AND you don't have to rush right before dinner to get a whole bunch of things done.

Chicken With Sundried Tomato Basil Cream Sauce


I love it when Sam ends a meal by saying that what I had made tasted just as good if not better then food he would order at a restaurant. This meal happened to be one of those times. The meal really isn't that hard to make and has so much flavor in it.
If you are looking for a recipe that looks super complicated and that will make you look like you are a master chef, this is one of them. Give this a try next time you are trying to impress somebody special.
