This recipe can be on your table in 30 minutes or less and its a one dish meal. It has your veg, your protein, and your grains...what more could you need?! You could do this with so many different combinations of meats and veggies.
This recipe came from the Kraft Foods website.
1/4 lb. whole wheat spaghetti, uncooked
1/4 cup Zesty Italian Dressing
2 cloves garlic, minced
1/2 lb. boneless skinless chicken breasts, cut into strips
2 cups broccoli florets
1/2 cup chopped tomatoes
1/2 cup Milk Shredded Mozzarella Cheese, divided
4 tsp Grated Parmesan Cheese
COOK spaghetti as directed on package, omitting salt.
MEANWHILE, heat dressing and garlic in large nonstick skillet on medium heat. Add chicken and broccoli; cook and stir 5 to 7 min. or until chicken is done. Stir in tomatoes and 1/4 cup mozzarella; cook 1 to 2 min. or until heated through, stirring occasionally.
DRAIN spaghetti; place on serving plate. Top with chicken mixture, remaining mozzarella and Parmesan.
**Randi's Side Notes**
~ I think next time I will add a little bit of lemon zest or some lemon pepper when cooking the chicken to add a little more flavor. Not that the flavor wasn't good but I think adding some lemon would be fantastic.
~ I will also add some fresh herbs to it as well, maybe some parsley for color and flavor.
~ Again I think this would be great with an assortment of different meats and veggies! Give them a try and let me know your favorite combination!
