Asian Salmon

So I made this recipe to put in the freezer for after I had Olivia. It turned out tasting really good. It also only took a few minutes to put together before...and after putting it in the freezer. I love a good fish recipe...especially if it is simple.
I love how all the marinades I have are different. For example, this marinade has dijon mustard in it...yep...dijon. Who would have thought it would be so good mixed with the other ingredients?!

4 salmon fillets, skinless and deboned
1 TBSP Dijon mustard
3 TBSP soy sauce (For GF just make sure you check your brand)
6 TBSP olive oil
1 clove garlic, minced
1 stalk green onion, sliced for garnish

1. Preheat oven to 375. Line a baking sheet with parchment paper. Set aside.
2. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl. Drizzle Half of the marinade onto the salmon and allow to sit for 10 minutes.
3. Place marinated fish on parchment lined baking sheet and bake in the oven for 5-7 minutes. Remove from oven and allow to rest for 2-5 minutes before serving. Garnish with sliced green onions and serve.

**Randi's Side Notes**
~ I marinated in most of the marinade and then basted the rest of it on once it came out.

**Freezer Instructions**
~ Whisk together the marinade. Pour it in a freezer bag and add the salmon fillets. Seal and freeze. When ready to prepare, thaw it out and cook it the same way you would have above.
~ I don't know if some brands of soy sauce have gluten in them but I have noticed that some brands do specifically say if they are gluten free. So just double check on this one if you need gluten free.
