Oven Fried Chicken
Here is a different take on fried chicken. A little more healthy. I actually got this recipe from a bisquick book! Who would have thought that pancake and biscuit mix would make a good fried chicken. I personally am a firm believer in that you can't have to many fried chicken recipes. I really like the added flavor of the ranch dressing and the cornflake crumbs give it a nice crunch.
1/3 cup buttermilk
4 chicken breasts
1/2 cup cornflake crumbs
1/2 cup Bisquick
1 envelope of ranch dressing mix
1-Heat oven to 400.
2- In a deep dish pour buttermilk and add chicken to coat. Let stand for at least 5 minutes.
3- In a large ziplock bag add cornflake crumbs, bisquick, and dressing mix. Remove chicken from buttermilk and add to bag. Give the chicken a little shimmy-shake :).
4- Place chicken in a baking dish and spray with cooking spray. Bake uncovered 40-50 minutes or until juice is no longer pink.
**Randi's Side Notes**
~ I actually had to cut this recipe way down. The original recipe was for like 12 chicken breasts or something like that so the measurements may be a little off.
~ The chicken is really good hot or cold to. I have used leftovers to put on top of a salad the next day.
